Maple Glaze Turkey

Ingredients
  • 6 lbs whole turkey breast
  • Brine:
  • 12 cups water
  • 2 cups Dr. Frank's Chardonnay
  • 1 cup Kosher salt
  • 1 cup brown sugar
  • 1 tbsp black peppercorns
  • 4 bay leaves
  • 4 sprigs thyme
  • Glaze:
  • 1 cup maple syrup
  • 1/2 cup sugar
  • 1/4 cup orange juice
  • 1 1/2 cups water
Directions

Brine: Place all ingredients in stock pot and brine 12-24 hours in refrigerator, turning over twice.

Glaze: Combine all ingredients in pot in sauce pan and cook on medium heat for 5-10 minutes stirring occasionally until glaze is very thick.  Return to room temperature.

Turkey: Preheat oven to 375 degrees. Pat turkey dry from brine and roast turkey for 80 minutes. Pull turkey and glaze entire breast, return to oven until thick part of breast is 160-165 degrees (about 5-10 min).
